Ingredients
6 Brussels sprouts
1 crushed clove garlic
1 tablespoon peanut oil
4 tablespoons hot chicken
stock
1/2 teaspoon soy sauce
pinch each salt, sugar and
Ve-Tsin
(M.S.G.)
1/2 teaspoon corn-flour
1 dessertspoon water
Method:
The sprouts
should be firm and compact. If small, they can be
left whole but it is a good idea to choose larger
ones and halve them. In either
case, remove and discard any damaged outer leaves.
Drop them into
boiling water and boil for 4 to 5 minutes, depending
on their size. Drain them well. Lightly brown the
garlic in the hot oil and then discard it. Add the
sprouts to the oil and cook for 2 minutes, tossing
and turning them.
Add the stock,
soy sauce and seasonings and bring to the boil. Push
the sprouts to one side of the pan and stir the
corn-flour, blended with the water, into the boiling
liquid.
Cook for 1 1/2 minutes. Place the sprouts in a
heated dish; pour the sauce over them and serve.
