Chinese Vegetables Recipes - Fried Brussels Sprouts Recipe

Ingredients

  • 6 Brussels sprouts

  • 1 crushed clove garlic

  • 1 tablespoon peanut oil

  • 4 tablespoons hot chicken stock

  • 1/2 teaspoon soy sauce

  • pinch each salt, sugar and Ve-Tsin (M.S.G.)

  • 1/2 teaspoon corn-flour

  • 1 dessertspoon water


Method:

  1. The sprouts should be firm and compact. If small, they can be left whole but it is a good idea to choose larger ones and halve them. In either case, remove and discard any damaged outer leaves.

  2. Drop them into boiling water and boil for 4 to 5 minutes, depending on their size. Drain them well. Lightly brown the garlic in the hot oil and then discard it. Add the sprouts to the oil and cook for 2 minutes, tossing and turning them.

  3. Add the stock, soy sauce and seasonings and bring to the boil. Push the sprouts to one side of the pan and stir the corn-flour, blended with the water, into the boiling liquid.

  4. Cook for 1 1/2 minutes. Place the sprouts in a heated dish; pour the sauce over them and serve.
