Chinese Vegetables Recipes - Fried Chinese Mushrooms Recipe

Ingredients

  • 3-4 Chinese mushrooms

  • 1 tablespoon peanut oil

  • 5 slices fresh root ginger

  • 1/2 pint (U.S. 1 1/4 cups) chicken stock

  • pinch each salt, sugar and Ve-Tsin (M.S.G.)

  • 3 drops soy sauce

  • 1 teaspoon corn-flour

  • 1 tablespoon cold water

  • 1 onion 'flower'


Method:

  1. When Chinese mushrooms are used in a dish, they require preliminary preparation. After removing the stalks, soak the mushrooms in cold. water overnight.

  2. Next day wash and drain them, then cover with chicken stock and cook them for 10 minutes.

  3. Drain and they are ready to be used as directed. In this case slice straight across the mushroom, giving four pieces.

  4. Heat the oil. Crush the ginger, fry it till golden and discard it. Add and fry the mushrooms for 2 minutes.

  5. Add the stock and boil hard for 10 minutes to reduce it. Add the seasonings during this time and the soy sauce. (This dish requires very little.)

  6. Finally, blend the corn-flour with the water, stir it in and continue to stir while boiling for 1 1/2 minutes. Turn into a heated dish, decorate with an onion 'flower' and serve.
