Ingredients
6-7-inch courgette
(zucchini or very young marrow)
1 crushed clove garlic
1 crushed thin slice fresh
ginger
1 tablespoon peanut oil
pinch each salt, sugar and
Ve-Tsin
(M.S.G.)
2-3 shakes white pepper
1/2 teaspoon ginger sherry
1/4 pint (U.S. 5/8 cup) hot chicken
stock
Method:
If necessary peel
the courgette thinly and then cut it diagonally into
oval slices about 1/4-inch thick. Fry the garlic and
ginger in the oil until a golden color and then
discard them.
Add the slices of
courgette and toss and turn them for 1 minute.
Sprinkle in the seasonings and sherry and turn over
and over for 1/2 minute.
Add the hot stock
and cook for 4-5 minutes. Turn into a heated dish
and serve.
