Turn spinach into
a large basin of cold water so that it can float
well. Plunge it up and down several times. Lift out
into a colander and drain. Do this three times in
all to make sure that all the grit has been removed.
Lift out and drain thoroughly.
Fry the garlic in
the hot oil until golden and then discard it. Add
the spinach to the oil and cook it at high heat for
1 minute, tossing and turning it. Add the hot stock,
seasoning and soy sauce and boil for 2 minutes.
Finally, blend
the corn-flour with the water and stir it in. Boil
for 1 1/2 minutes. Turn into a heated dish and serve.
