Chinese Vegetables Recipes - Fried Watercress Recipe

Ingredients

  • 4- oz. watercress

  • 1 dessertspoon peanut oil

  • 1 crushed thin slice ginger

  • 1 crushed clove garlic

  • 4- tablespoons hot chicken stock

  • 1 teaspoon ginger sherry

  • pinch each salt, sugar and Ve-Tsin (M.S.G.)

  • 1/4 teaspoon soy sauce

  • 1/4 teaspoon corn-flour

  • 1 dessertspoon cold water


Method:

  1. Pick over the watercress, removing and discarding any discolored or limp leaves, but do not trim the stalks unless they are very coarse.

  2. Heat the oil and in it fry the ginger and garlic. When the latter is pale gold discard it. Add the stock, sherry, watercress, seasonings and soy sauce, and stir while cooking for 1 minute.

  3. Stir in the corn-flour, blended with the water, and boil for 1 1/2 minutes. Turn into a heated dish and serve.
