Chinese Vegetables Recipes - Julienne of Vegetables Recipe

Ingredients

  • 2 oz. carrots

  • 2 oz. white cabbage

  • 2 oz. green pepper

  • 2 oz. celery

  • 1 tablespoon peanut oil

  • 1 crushed clove garlic

  • 1 slice fresh ginger

  • 1/4 pint (U.S. 5/8 cup) chicken stock

  • small pinch each salt, sugar and V e- Tsin (M.S.G.)

  • dash pepper

  • 1/2 teaspoon soy sauce

  • 1 teaspoon corn-flour

  • 1 tablespoon cold water


Method:

  1. Cut the vegetables into very thin 2-3-inch strips. Heat the oil in a frying-pan. Add the garlic. When golden discard it.

  2. Add the ginger and almost immediately the stock and vegetables. Cook for 2 minutes, moving them about.

  3. Add the seasonings and soy sauce and cook them for 1/4 minute. Blend the corn-flour with the water and stir it into the boiling mixture. Gently cook for 1 1/2 minutes. Turn into a heated dish and serve.

Note: This julienne of vegetables is also used as a garnish for Chinese dishes. Especially useful if you want to make a dish look bigger than it is.
