Cut the
vegetables into very thin 2-3-inch strips. Heat the
oil in a frying-pan. Add the garlic. When golden
discard it.

Add the ginger and almost immediately
the stock and vegetables. Cook for 2 minutes, moving
them about.

Add the
seasonings and soy sauce and cook them for 1/4 minute.
Blend the corn-flour with the water and stir it into
the boiling mixture. Gently cook for 1 1/2 minutes.
Turn into a heated dish and serve.
Note: This julienne of vegetables is also used as a
garnish for Chinese dishes. Especially useful if you
want to make a dish look bigger than it is.
