Chinese Vegetables Recipes - Leeks and Pork Recipe
Ingredients

2 tablespoons raw leg of
pork

salt and Ve-Tsin
(M.S.G.)

white pepper

1 teaspoon ginger sherry

few drops sesame oil

1 small teaspoon corn-flour
-
1 teaspoon water
-
1 very thin slice fresh
ginger

1 tablespoon peanut oil

4-5 tablespoons leeks,
clean and cut diagonally into 1 inch slices and
separated

1/4 teaspoon sugar
-
3-5 tablespoons hot chicken
stock
Method:

Cut the pork into
thin slices, diagonally. (This helps to retain their
shape during the cooking). Place the slices in a
basin with a good pinch salt, good pinch Ve-Tsin, a
few shakes pepper, 1/2 teaspoon ginger sherry,
sesame oil, corn-flour and water.

Chop the ginger.
Heat the oil in a trying-pan and fry the ginger in
it for 1/4 minute.

Add the pork and
fry it for 4 minutes. Add the leeks, another good
pinch salt, good pinch Ve-Tsin, few shakes pepper,
the remaining ginger sherry and a few drops sesame
oil.

Add also the
sugar and stock and cook for 2-3 minutes. Turn into
a heated dish and serve.
Note: There is hardly any liquid left when this dish
is ready.
