Chinese Vegetables Recipes - Sprouting Broccoli Recipe

Ingredients

  • 1 teaspoon sugar

  • 1 tablespoon white malt vinegar

  • 6 stalks sprouting broccoli

  • 1 tablespoon peanut oil

  • 1 clove garlic

  • 1 thin slice fresh ginger

  • salt and Ve-Tsin (M.S.G.)

  • white pepper

  • 1/2 teaspoon ginger sherry

  • 3-4 tablespoons hot chicken stock

  • 1 beaten egg


Method:

  1. Blend together the sugar and vinegar and leave to rest. Choose tender stalks of either green or purple sprouting broccoli.

  2. If the lower ends are a little hard, peel thin strips off them with a potato parer. Also crush the stem ends which will help them to absorb the stock and cook quickly. Drop the broccoli into boiling water for 5 minutes then drain well.

  3. Heat the oil in a frying-pan. Add the crushed garlic and ginger, fry until golden and then discard both. Add the broccoli, pinch salt, pinch Ve-Tsin, few shakes pepper, sherry and stock and cook for 3-4 minutes, tossing the broccoli about.

  4. Meanwhile, beat the egg and add a further tiny pinch each of salt and Ve-Tsin and a little white pepper. Trickle the egg over the broccoli while moving it about.

  5. Finally, sprinkle the sweetened vinegar over all. Toss for a few seconds to heat through. Turn into a heated dish and serve.
