Chinese Vegetables Recipes - White Heart of Cabbage Recipe

Ingredients

  • 1 heart of cabbage (about 4 oz.)

  • 1 dessertspoon peanut oil

  • 1 slice fresh ginger

  • 1 clove garlic

  • pinch each salt, sugar and Ve-Tsin (M.S.G.)

  • 1/2 teaspoon soy sauce

  • 4 tablespoons hot chicken stock

  • 1/2 teaspoon corn-flour

  • 1 tablespoon cold water


Method:

  1. Cut the cabbage heart into 1 to 1 1/2-inch pieces and separate each from the others. Drop them into 1/2 pint (U.S. 1 1/4 cups) boiling water and cook for 10 minutes. Drain thoroughly.

  2. Heat the oil in a frying-pan. Crush the ginger and garlic and add to the oil and cook until the garlic is a deep golden color. Discard it.

  3. Add the cabbage and, in quick succession, the seasonings and soy sauce. Stir them about. Add the chicken stock and cook for less than 1/2 minute.

  4. Blend the corn-flour with the water and stir it in. Boil for 1 1/2 minutes. Turn all into a heated dish and serve.

Note: The heart of cabbage can be that of anyone which is seasonal. One would not, however, use hard white Dutch winter cabbage.
