Chinese Sauces Recipes - Celery Sauce Recipe

Ingredients

  • 2 stalks celery, thinly sliced

  • 4 spring onions (scallions), minced

  • 250 ml/8 fl oz/1 cup chicken stock

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 30 ml/2 tbsp soy sauce

  • 15 ml/1 tbsp rice wine or dry sherry

  • 15ml/1 tbsp corn flour (cornstarch)

  • 45 ml/3 tbsp water


Method:

  1. Mix all the ingredients except the corn flour and water in a pan and bring slowly to the boil. Cover and simmer for 15 minutes.

  2. Mix the corn flour and water to a paste, stir into the pan and simmer, stirring, until the sauce thickens.
