Marinade Recipe
Ingredients

3 cloves garlic,
crushed
-
1 slice ginger root,
minced
-
250 ml/1 cup
chicken stock
-
60 ml/4 tbsp soy sauce
-
30 ml/2 tbsp rice wine
or dry sherry

15 ml/1 tbsp brown sugar
Method:

Mix together all the ingredients and pour over spare
ribs.

Leave to stand for 1 hour, basting
occasionally, then drain and cook.

Baste with the
marinade while cooking, or use as the base for a
sauce.
