Ingredients

2 egg yolks
-
250 ml/8 fl oz/1 cup
water

30 ml/2 tsp groundnut
(peanut) oil

10 ml/2 tsp corn flour
(cornstarch)

2.5ml/1/2 tsp salt
Method:

Beat the egg yolks with 60 ml/4 tbsp of water. Heat
the oil, stir in the corn flour and cook over a low
heat until smooth.

Stir in the remaining water and
salt and heat gently, stirring, until the mixture
is smooth and bubbling.

Gradually pour in the egg mixture in a thin stream,
stirring continuously.

Simmer over a low heat, stirring, until the sauce is
smooth and creamy. Pour over chicken or vegetables
to serve.
