Chinese Sauces Recipes - Egg Yolk Sauce Recipe

Ingredients

  • 2 egg yolks

  • 250 ml/8 fl oz/1 cup water

  • 30 ml/2 tsp groundnut (peanut) oil

  • 10 ml/2 tsp corn flour (cornstarch)

  • 2.5ml/1/2 tsp salt


Method:

  1. Beat the egg yolks with 60 ml/4 tbsp of water. Heat the oil, stir in the corn flour and cook over a low heat until smooth.

  2. Stir in the remaining water and salt and heat gently, stirring, until the mixture is smooth and bubbling.

  3. Gradually pour in the egg mixture in a thin stream, stirring continuously.

  4. Simmer over a low heat, stirring, until the sauce is smooth and creamy. Pour over chicken or vegetables to serve.
