Chinese Marinades and Condiments Recipes - Hoi Sin and Chili Marinade Recipe

Ingredients

  • 2 cloves garlic, crushed

  • 2.5 cm/1 in garlic root, minced

  • 1 spring onion, finely chopped

  • 60 ml/4 tbsp rice wine or dry sherry

  • 30 ml/2 tbsp soy sauce

  • 15 ml/1 tbsp hoi sin sauce

  • 15 ml/1 tsp chili sauce

  • 15 ml/1 tbsp honey

  • 2.5 ml/1/2 tsp salt


Method:

  1. Mix together all the ingredients and rub over pork.

  2. Leave to stand for 2 hours, then drain and cook.

  3. Baste with the marinade while cooking.
