Chinese Marinades and Condiments Recipes - Hoi Sin and Sherry Marinade Recipe

Ingredients

  • 75 ml/5 tbsp hoi sin sauce

  • 45 ml/3 tbsp soy sauce

  • 30 ml/2 tbsp rice wine or dry sherry

  • 30 ml/2 tbsp brown sugar

  • 2.5 ml/1/2 tsp five-spice powder


Method:

  1. Mix all the ingredients together and rub over spare ribs.

  2. Leave to stand for 2 hours, basting occasionally, then drain and cook.

  3. Baste with the marinade while cooking.
