Ingredients

75 ml/5 tbsp hoi sin
sauce
-
45 ml/3 tbsp soy
sauce
-
30 ml/2 tbsp rice
wine or dry sherry
-
30 ml/2 tbsp brown
sugar
-
2.5 ml/1/2 tsp
five-spice powder
Method:
-
Mix all the ingredients together and rub over spare
ribs.

Leave to stand for 2 hours, basting
occasionally, then drain and cook.

Baste with the
marinade while cooking.
