Ingredients
Method:

Soak the mushrooms in warm water with the sugar for
30 minutes then drain, reserving the liquid. Discard
the stems and slice the caps.

Melt the butter and
fry the spring onions and garlic until softened.

Add
the mushrooms and liquid, tomato and a pinch of
salt.

Bring to the boil and simmer for 10 minutes
until the vegetables are cooked.

Blend the corn flour
with a little cold water, stir it into the sauce and
simmer, stirring, until the sauce thickens.
