Chinese Sauces Recipes - Plum Sauce Recipe

Ingredients

  • 225 g/8 oz plums, peeled, stoned and roughly chopped

  • 225 g/8 oz dried apricots, soaked and roughly chopped

  • 2 canned pimentos, drained and chopped

  • 225 g/8 oz/1 cup brown sugar

  • 120 ml/4 fl oz/1/2 cup wine vinegar

  • 60 ml/4 tbsp apple puree


Method:

  1. Combine all the ingredients in a pan and bring slowly to the boil, stirring.

  2. Cover and simmer gently for about 1 hour, stirring occasionally, and adding a little water if the sauce becomes too thick.

  3. Pour into warm jars, seal, label and store in a cool place for a few weeks before using.
